We had our first snow of the season yesterday here in Wisconsin.
Well, it was actually more of a snowstorm — gusty winds, heavy wet snow which turned to icy rain. Not a pleasant day to be outside; more of the snuggle-inside-with-comfort-food kind of day.
Mashed potatoes top my list of comfort foods. One of our favorite hotdishes is shepherd’s pie, which defines comfort foods to the fullest — warm, rich and no skimping on the butter. My rendition is to make it with ground beef mixture, topped with frozen vegetables and a heavy layer of mashed potatoes. Homemade mashed potatoes with milk and butter and whipped until smooth.
This hotdish is easy to make and disappears at supper time. I like to make it ahead of time and pop it in the oven while I finish chores. Then, after a chilly snowy day, like in this instance, we can sit down to a cozy dinner, comfort-food style.
Shepherd’s Pie
Ingredients:
Ground beef
1/4 cup ketchup
Worcestershire sauce
1 cup beef broth
1 10-ounce package mixed frozen vegetables (I like carrots, beans and peas blend)
Mashed potatoes
Layer 1: Brown hamburger and add the ketchup, a couple dashes of Worcestershire sauce and beef broth.
Layer 2: Add the mixed frozen vegetables.
Layer 3: Add the mashed potatoes.
Bake at 350 for 25-35 minutes.
